Grown-up foods

When I was young, certain dishes automatically made me feel grown up. For some reason, one particular group of dishes seemed rather worldly: cold soups.

What is it about gazpacho, vichyssoise and cucumber soups? They just seem to add a little panache to any meal.

During my recent vacation, cold soups achieved a whole new level of sophistication. Romel and Constantin served me a piña colada soup served in a cocktail glass aboard the Star Princess.

Frozen Rum-Infused Piña Colada Soup from Princess Cruises
yields 10 servings

Ingredients:
2⅔ lbs pineapple (keep some slices for garnish)
1 cup sugar, granulated
2¾ cup plain yogurt
5⅓ cup sour cream
2⅔ cup coconut milk
3/8 cup lime juice
5⅓ oz coconut flakes
⅛ cup rum
10 pieces pineapple, for garnish


Method of preparation:
In a food processor blend pineapple, sugar, limes juice, coconut milk and coconut flakes.
Combine pineapple mixture, plain yogurt, sour cream and rum in a bowl, stirring well. Cover and chill at least for 3 hours.
Pour into glasses and serve immediately.
